Feta and chickpea burger

A vegetarian option also loved by meat lovers due to its tasty combination of ingredients.

Ingredients

  • Sweet potato 600g
  • Olive oil 1 Tbsp
  • Onion, finely chopped 1
  • Garlic, crushed 2 Cloves
  • Ground cumin 2 Tsp
  • Ground coriander 1 Tsp
  • Chickpeas, roughly mashed with fork 400g
  • Coriander leaves 25g
  • Feta, crumbled 100g
  • Egg, beaten 1
  • Salt and pepper To season
  • Burger buns, toasted 4

Directions

  1. Peel and cube the sweet potato then carefully add to a saucepan of boiling water. Simmer for 15-20 minutes then drain the water, mash the potatoes and set to one side to cool.

  2. Heat one tablespoon of olive oil in non-stick frying pan over medium heat. Add the onion and garlic and cook for 5-6 minutes, until soft. Set aside to cool.

  3. In a large bowl, mix together the cold mashed sweet potato, cooked onion, spices, mashed chickpeas and coriander.  Stir in crumbled feta and season with salt and pepper. Add just enough beaten egg to bind the mixture making sure it is not sloppy then cover with cling film and refrigerate until the mixture becomes firm. 
  4. Divide into four round balls and flaten to make burget patty. 

  5. Warm the burgers under the grill, in the oven or fry for a few minutes on each side, then serve in a toasted bun with your choice of salad and sauce.
