Curry lentil soup with tomatoes

  • Onion, diced 1
  • Ginger, peeled and chopped 20g
  • Turmeric 10g
  • Olive oil 2 Tbsp
  • Curry powder 2 Tsp
  • Vegetable stock 1ltr
  • Carrots, diced 3
  • Chopped tomatoes 400g
  • Yellow lentils 150g
  • Cherry tomatoes 200g
  • Parsley, chopped 2 Tbsp
  • Garlic powder 1/2 Tsp

Directions

  1. Peel and chop the carrot, onion and potatoes.
  2. Fry the onion, chilli, ginger and turmeric in hot oil. Add the curry powder and fry for a few more minutes.
  3. Add the vegetable stock, carrots and potatoes then simmer for around 10 minutes.
  4. Add the lentils and tomatoes then cook for another 10-15 minutes until the lentils are al denté. Season with salt and ground black pepper and serve garnished with parsley.
